
Easy Roasted Vegetables
A simple and delicious roasted vegetables recipe, seasoned with herbs and spices. Perfect as a healthy side dish.

Ingredients
- 1 kg sweet potatoes
- 1 large zucchini
- 1 broccoli
- 2 tomatoes chopped
- 2 onions sliced
- 5 cloves garlic
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp oregano
- 1 tsp rosemary
- 1 tsp turmeric
- 1 cup olive oil
- 2 cups water
Instructions
- Cut all vegetables and spread them on a baking tray.
- In a bowl, mix salt, pepper, paprika, oregano, rosemary, turmeric, and olive oil.
- Pour the seasoning over the vegetables and mix well.
- Add water to the baking tray.
- Bake at 180°C (350°F) for 40 minutes.
- Remove from the oven and baste the vegetables with the cooking liquid.
- Return to the oven for another 20 minutes until soft and golden.
Notes
Baste the vegetables during cooking to prevent them from drying out. You can adjust the vegetables based on your preference.
