
Potato Fritters with Carrot and Cheese
These crispy potato fritters with carrot and cheese are golden on the outside and soft on the inside. A simple homemade recipe that many say tastes even better than meat.

Ingredients
- 800 g potatoes cut into pieces
- 1 teaspoon butter
- 1 unit grated carrot
- 150 g shredded mozzarella cheese
- chopped parsley or green herbs to taste
- 2 units eggs
- 2 tablespoons plain yogurt
- 3 tablespoons all-purpose flour
- oil for frying
Instructions
- Cook the potatoes in hot water until they become very soft.
- Drain the cooked potatoes and set them aside.
- In a pan, melt the butter and sauté the grated carrot.
- Mash the potatoes well until they form a smooth mash.
- Add the sautéed carrot, shredded mozzarella cheese, and chopped herbs.
- Mix everything until a soft dough forms.
- Use a spoon to shape small balls or fritters.
- In a bowl, mix the eggs, yogurt, and flour until smooth.
- Dip each fritter into the batter mixture.
- Heat oil in a skillet and fry the fritters until golden.
- Turn them to brown evenly on all sides.
- Remove and place on paper towels to absorb excess oil.
Notes
You can add extra seasoning like paprika, garlic powder, or black pepper to enhance the flavor.
