Ingredientes
  

  • 800 g potatoes cut into pieces
  • 1 teaspoon butter
  • 1 unit grated carrot
  • 150 g shredded mozzarella cheese
  • chopped parsley or green herbs to taste
  • 2 units eggs
  • 2 tablespoons plain yogurt
  • 3 tablespoons all-purpose flour
  • oil for frying

Modo de preparo
 

  • Cook the potatoes in hot water until they become very soft.
  • Drain the cooked potatoes and set them aside.
  • In a pan, melt the butter and sauté the grated carrot.
  • Mash the potatoes well until they form a smooth mash.
  • Add the sautéed carrot, shredded mozzarella cheese, and chopped herbs.
  • Mix everything until a soft dough forms.
  • Use a spoon to shape small balls or fritters.
  • In a bowl, mix the eggs, yogurt, and flour until smooth.
  • Dip each fritter into the batter mixture.
  • Heat oil in a skillet and fry the fritters until golden.
  • Turn them to brown evenly on all sides.
  • Remove and place on paper towels to absorb excess oil.

Notas

You can add extra seasoning like paprika, garlic powder, or black pepper to enhance the flavor.
