
Roasted Pumpkin with Honey, Vinegar and Herbs
This roasted pumpkin with honey, vinegar and herbs is a simple, aromatic and delicious recipe to serve as a side dish. The pumpkin is cut into slices, coated in a sweet-and-sour seasoning made with honey, vinegar, salt, black pepper, thyme, rosemary and fresh herbs, then roasted until tender and golden on both sides. The result is a lightly caramelized, fragrant and very flavorful pumpkin.

- microwave For slightly softening the pumpkin before cutting, if needed.

Ingredients
- 1/2 piece pumpkin cut into medium slices
- 3 tablespoons honey
- 2 tablespoons vinegar
- 1 pinch black pepper
- 1/2 teaspoon salt
- 1 teaspoon thyme
- rosemary to taste
- fresh herbs to taste
- chives to taste
- cilantro to taste
- olive oil for greasing the pan
Instructions
- If the pumpkin is very firm, microwave it for about 2 minutes to soften slightly and make cutting easier.
- Cut the half pumpkin into medium slices, not too thick and not too thin.
- Set the slices aside while preparing the seasoning.
- In a bowl, add the honey, vinegar, black pepper, salt, thyme, rosemary, fresh herbs, chives and cilantro.
- Mix very well until a sweet-and-sour aromatic seasoning forms.
- Coat the pumpkin slices in this seasoning, covering all sides well.
- Grease a baking pan with a little olive oil.
- Arrange the seasoned pumpkin slices in the pan, placing them neatly.
- Bake in a preheated oven at 180 degrees for 30 minutes.
- Remove the pan from the oven and carefully turn all the slices.
- Return to the oven for another 10 minutes, until the other side is also golden.
- Remove from the oven, transfer to a plate and serve while still hot.

Notes
If the pumpkin is too firm to cut, heat it for about 2 minutes in the microwave to soften it slightly and make slicing easier. Cut the slices to medium thickness, because very thick slices take longer to roast and very thin slices may fall apart. Turn the slices halfway through so both sides brown well. You can use white vinegar, apple cider vinegar or another vinegar you prefer, adjusting the flavor to taste.
