Oriental Style Chicken with Broccoli

Ingredients
  

  • 300 g broccoli
  • 1 carrot sliced thinly
  • 1 tsp salt
  • 2 chicken breasts cut into cubes
  • 1 tsp salt for the chicken
  • 1/2 tsp black pepper
  • 1 tsp oregano
  • 2 garlic cloves minced
  • 1 onion sliced
  • 1 tbsp cornstarch
  • 4 tbsp soy sauce

Instructions
 

  • In a pot add the broccoli, carrot and salt. Cover with hot water and cook for about 5 minutes.
  • Drain the vegetables and set them aside.
  • In a skillet cook the cubed chicken until it begins to brown.
  • Season the chicken with salt, black pepper and oregano and mix well.
  • Add the minced garlic and sliced onion and sauté until golden.
  • Add the cooked broccoli and carrot and mix well.
  • Dissolve the cornstarch in a little water until smooth.
  • Add the dissolved cornstarch and soy sauce to the pan and mix well.
  • Turn the heat back on and cook until the sauce slightly thickens.
  • Turn off the heat, transfer to a serving bowl and serve hot.

Notes

Serve with steamed white rice or fried rice for a complete meal. If you prefer a thicker sauce, add a little more cornstarch dissolved in water.
