This crispy bread salad with lettuce, bacon and creamy dressing is a practical and delicious way to use leftover bread.   • 3 cloves garlic, chopped for the dressing
  • 150 g mayonnaise
  • 200 g lightly fried bacon
  • 1 tablespoon grated Parmesan cheese
  • 2 tablespoons soy sauce
  • 1 tablespoon mustard
  • 1 piece lemon, juiced
  • 1 pinch salt
  • 1 pinch black pepper
  • olive oil for browning the garlic and bread
  • 4 cloves garlic for flavoring the olive oil
  • 6 slices sandwich bread cut into cubes
  • 1 bunch washed lettuce
  • grated Parmesan cheese to taste for finishing

Modo de preparo
 

  • In a bowl, place the chopped garlic cloves for the dressing.
  • Add the mayonnaise, lightly fried bacon, grated Parmesan cheese, soy sauce, mustard, lemon juice, salt and black pepper.
  • Mix very well until a creamy dressing or well-combined paste forms.
  • Cover the bowl with plastic wrap and reserve in the refrigerator while preparing the bread.
  • Place olive oil in a skillet and heat over medium heat.
  • Add the garlic cloves and let them brown to flavor the olive oil.
  • Remove the browned garlic cloves from the skillet.
  • Place the cubed sandwich bread in the skillet and toast lightly until firm, dry and crispy.
  • Turn off the heat and reserve the toasted bread cubes.
  • Place the washed lettuce in a large bowl or salad bowl.
  • Add the dressing gradually over the lettuce and mix very well to coat the leaves.
  • Add the toasted bread cubes and mix gently.
  • Finish with grated Parmesan cheese on top, in the desired amount.
  • Serve the salad right away to keep the bread crispy.

Notas

Use bread cut into cubes and toast it lightly so it becomes firm and crispy. The garlic used to flavor the olive oil should be removed before adding the bread, preventing it from burning and turning bitter. Add the dressing gradually to the lettuce to control the creaminess. Since bacon, soy sauce and mayonnaise already contain salt, adjust the salt carefully. Serve right after mixing in the bread to keep the crunchy texture.
