Modo de preparo
Mix 10g of yeast with 4 tablespoons of flour and 100 ml of water. Let rest for 15 minutes.
Add the remaining 10g of yeast, salt, and sugar, mixing well.
Add the flour and cold water gradually until a dough forms.
Knead the dough well until smooth and no longer sticky.
Add the butter and knead again until fully incorporated.
Let the dough rest for 15–20 minutes until it doubles in size.
Divide the dough into portions of about 60g and shape into rolls.
Let rest again for 30 minutes.
Score the tops lightly and bake at 200°C (390°F) for 30 minutes with steam in the oven.

Notas
Use very cold water for better dough texture. Placing a pan with water in the oven creates steam and helps achieve a crispy crust.
