These onion fritters with egg and mayonnaise sauce are a quick, budget-friendly and very flavorful recipe to serve as a snack, appetizer or side dish. The onion is mixed with eggs, salt, fresh herbs, sweet paprika and wheat flour until it forms a simple batter, then fried in portions until golden. A creamy sauce made with mayonnaise, mustard and oregano completes the flavor.

Ingredientes
  

  • 1 piece large onion, chopped or sliced
  • 3 pieces eggs
  • salt to taste
  • fresh herbs to taste
  • sweet paprika to taste
  • 3 tablespoons wheat flour
  • oil for frying
  • mayonnaise to taste
  • mustard to taste
  • oregano to taste
  • cream, optional

Modo de preparo
 

  • Place the chopped or sliced onion in a bowl.
  • Add the eggs over the onion.
  • Season with salt, fresh herbs and sweet paprika to taste.
  • Add the wheat flour and mix everything very well, carefully, until a moist and consistent batter forms.
  • Heat the oil in a skillet or saucepan.
  • Using a spoon, take portions of the batter and use another spoon to help shape them.
  • Place the portions in the hot oil and fry until they begin to brown.
  • Turn the fritters with two forks so the other side also browns.
  • When golden on both sides, remove from the oil and place in a lined container, if desired, to drain.
  • Repeat the process until all portions are fried.
  • For the sauce, place mayonnaise and mustard in a small bowl.
  • Mix very well until a creamy sauce forms. If desired, add a little cream.
  • Add oregano to the sauce and mix again.
  • Serve the onion fritters while still hot with the sauce on the side.

Notas

Add the flour gradually while checking the texture of the batter, which should be firm enough to shape with a spoon. Fry in hot oil, but not over very high heat, so the fritters brown outside and cook inside. Use two spoons to shape the portions more easily. Drain well after frying to remove excess oil. The sauce can receive a little cream if you want a milder texture.
