This parmesan breaded chicken with lemon sauce is juicy, golden and full of flavor. The chicken breast is opened, pounded until thinner, coated in flour and then dipped in a mixture of eggs, garlic, paprika, black pepper, herbs and parmesan cheese. After being fried in butter, the chicken returns to the skillet with chicken broth, garlic, lemon and more butter, becoming tender, aromatic and delicious.

Ingredientes
  

  • 1 chicken breast
  • 1 cup wheat flour
  • 2 eggs
  • 6 cloves chopped garlic
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • fresh herbs to taste
  • 50 g grated parmesan cheese
  • butter for frying
  • 150 ml chicken broth
  • 1/2 lemon, juiced
  • 1 tablespoon butter for the sauce

Modo de preparo
 

  • Cut the chicken breast in half, opening it carefully.
  • Make a few shallow cuts in the chicken, cover with plastic and pound with a meat mallet to make it thinner.
  • Place the wheat flour in a bowl and coat the chicken well in the flour.
  • Set the floured chicken aside while preparing the egg mixture.
  • In another bowl, add the eggs, half of the chopped garlic, salt, paprika, black pepper, fresh herbs and parmesan cheese.
  • Mix everything very well until a seasoned mixture forms.
  • Dip the floured chicken into this mixture, coating both sides well.
  • Melt butter in a skillet and add the chicken to fry.
  • Let it brown on one side, then turn and brown the other side as well.
  • Remove the golden chicken from the skillet and reserve on a plate.
  • In the same skillet, add the chicken broth, remaining chopped garlic, fresh herbs, the juice of half a lemon and the butter for the sauce.
  • Mix well until an aromatic sauce forms.
  • Return the chicken to the skillet and cook briefly in the sauce so it absorbs the flavor.
  • Turn the chicken so the other side absorbs the seasoning and cook for a few more minutes.
  • Remove the chicken, place it on a plate and finish with some sauce on top.

Notas

Pounding the chicken helps make it thinner and cook evenly. Coat it well in flour before the egg mixture so the seasoning sticks better. Fry over medium heat to brown without burning the butter. The lemon sauce should cook just enough to coat the chicken and enhance the flavor. Serve with white rice, mashed potatoes, vegetables or salad.
