Rice with Beef, Potatoes, Carrot and Peas

This rice with beef is a complete, flavorful recipe perfect for lunch or dinner. The beef is fried until browned and dry, then returned to the pan with garlic, onion, mustard and seasonings, along with potatoes, carrot, peas and washed rice to cook together into a practical, well-seasoned meal.

Ingredientes
  

  • 1 kg beef cut into pieces
  • salt to taste
  • 1 teaspoon black pepper
  • olive oil to taste
  • chopped garlic to taste
  • chopped onion to taste
  • 2 tablespoons mustard
  • water for cooking
  • 2 potatoes cut into cubes
  • 1 carrot cut into small pieces
  • 1 small carton peas
  • 1 cup washed rice

Modo de preparo
 

  • Place the beef in a large skillet or pot and season with salt to taste and black pepper.
  • Fry the beef well until browned, dry and flavorful.
  • Remove the beef from the pan and set aside.
  • In the same pan, using the beef drippings, add a little more olive oil if needed.
  • Add the garlic and onion and sauté until lightly golden.
  • Add the mustard and return the beef to the pan.
  • Adjust salt carefully, add a little water and mix well.
  • Let it boil for about 4 minutes so the beef absorbs the flavor.
  • Add the cubed potatoes, carrot pieces and peas.
  • Add more water to lightly cover the ingredients, cover and cook for about 10 minutes.
  • When the potatoes and carrot start to soften, add the washed rice.
  • Mix well and add enough more water to cook the rice.
  • Cover again and cook over medium-low heat until the rice is tender and the water has dried.
  • Turn off the heat, let rest for a few minutes and serve hot.

Notas

Brown the beef well before adding the other ingredients to build more flavor. Since mustard is already salty, add salt carefully and adjust at the end if needed. Add enough water to lightly cover the ingredients before cooking the vegetables, then add more water to cook the rice. Use medium-low heat after adding the rice to prevent sticking.
