This skillet snack with day-old bread is a quick, budget-friendly and delicious recipe for using up leftover bread. Bread slices are arranged in a buttered skillet and covered with a creamy mixture of eggs, tomato, onion, fresh herbs, cream and simple seasonings.   • 1 onion chopped into small pieces
  • 1 tomato chopped into small pieces
  • 5 eggs
  • fresh herbs to taste
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 200 g cream
  • day-old bread cut into slices
  • butter for greasing the skillet

Modo de preparo
 

  • Chop the onion into small pieces and set aside.
  • Chop the tomato into small pieces and reserve with the onion.
  • Place the eggs in a bowl and beat well with a whisk or fork.
  • Add the onion, tomato, fresh herbs, salt, black pepper and cream to the eggs.
  • Mix very well until all ingredients are incorporated.
  • Cut the day-old bread into slices and set aside.
  • Grease a skillet with butter, spreading it well over the entire surface.
  • Arrange the bread slices in the skillet, covering the bottom.
  • Pour the egg and cream mixture over the bread, spreading it to cover everything.
  • Cover the skillet, turn on low heat and cook until the snack sets.
  • Use a spatula to check that the base is loose, then carefully remove it from the skillet.
  • Transfer to a plate, cut into slices and serve immediately.

Notas

Cut the bread into similar-sized slices so it cooks evenly. Use low heat and keep the skillet covered so the eggs cook through without burning the bread base. The amount of bread may vary depending on the size of the skillet. Add shredded cheese or chopped ham if you want a more filling version. Check with a spatula that the base is loose before removing it from the skillet.
