These skillet stuffed potatoes are golden, crispy patties made with cooked mashed potatoes, seasonings, chopped ham, egg and breadcrumbs. The dough is filled with mozzarella cheese, shaped into balls and fried until golden outside and creamy inside, perfect as a snack, appetizer or side dish.

Ingredientes
  

  • 4 potatoes cut into small pieces
  • 1 teaspoon salt for cooking the potatoes
  • bay leaves to taste
  • water to cover the potatoes
  • 1 tablespoon margarine
  • 1 teaspoon salt for seasoning the dough
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon nutmeg
  • 100 g ham chopped into small pieces
  • 1 egg
  • 1 cup breadcrumbs
  • oil for greasing your hands
  • mozzarella cheese pieces for filling
  • oil for frying

Modo de preparo
 

  • Cut the potatoes into small pieces and place them in a pot.
  • Add salt, bay leaves and enough water to cover the potatoes.
  • Cover the pot and cook for about 15 minutes, or until the potatoes are very soft.
  • Drain the cooked potatoes and transfer them to a bowl.
  • Add the margarine and mash the potatoes well until smooth.
  • Season with salt, black pepper, garlic powder and nutmeg. Mix well.
  • Add the chopped ham and egg, mixing until incorporated.
  • Add the breadcrumbs and mix until a uniform, shapeable dough forms.
  • Grease your hands with a little oil, take a portion of dough and shape it into a ball.
  • Open a space in the center, add a piece of mozzarella cheese and seal well.
  • Shape the stuffed patty and repeat with all the dough.
  • Heat oil in a skillet and add a few patties, leaving space between them.
  • Fry until golden on one side, turn carefully and brown the other side.
  • Remove the patties and place them on paper towels to drain excess oil.
  • Serve while still hot to enjoy the melted cheese filling.

Notas

Cook the potatoes until very soft so they mash easily. Breadcrumbs help give structure to the dough, so mix until it can be shaped without falling apart. Rub a little oil on your hands to shape the patties more easily and seal them well so the cheese does not leak during frying.
