These stuffed potatoes with ham, mozzarella and bacon are a delicious, creamy recipe perfect for lunch or dinner. The potatoes are cooked with bay leaves and salt, then filled with a mixture of mozzarella, ham, cream cheese spread and fresh herbs. To finish, each potato is wrapped with bacon, topped with more mozzarella and baked until golden, creamy and very flavorful.

Ingredientes
  

  • 4 pieces potatoes cut in half with a cavity
  • hot water enough to cover the potatoes
  • 2 leaves bay leaves
  • 1 teaspoon salt
  • 100 g mozzarella cheese cut into small pieces
  • 100 g ham cut into small pieces
  • 200 g cream cheese spread
  • fresh herbs to taste
  • 8 slices bacon
  • mozzarella cheese pieces for finishing

Modo de preparo
 

  • Cut the potatoes in half and make a cavity or hole in each half to hold the filling.
  • Place the potatoes in a saucepan and add hot water until covered.
  • Add the bay leaves and salt.
  • Cover the saucepan and cook the potatoes for 10 minutes, until tender but still firm.
  • Drain the potatoes well and set aside.
  • Cut the mozzarella into small pieces and place it in a bowl.
  • Cut the ham into small pieces and add it to the mozzarella.
  • Add the cream cheese spread and fresh herbs to taste.
  • Mix very well until a creamy, even filling forms.
  • Fill all the cooked potatoes with the prepared filling.
  • Wrap each potato with two slices of bacon.
  • Secure the bacon with toothpicks to keep the slices in place.
  • Place the stuffed potatoes in a baking pan or baking dish.
  • Distribute mozzarella pieces over each potato.
  • Bake for 15 minutes, until the cheese melts and the bacon browns.
  • Remove the toothpicks before serving, cut one potato to show the filling and serve hot.

Notas

Make a hole or cavity in the potatoes before cooking to make filling easier later. Cook only until tender but still firm, so they do not break when filling. Cut the ham and mozzarella into small pieces to make the filling more even. Use toothpicks to secure the bacon well and remember to remove them before serving. Serve hot to enjoy the melted cheese.
