Tuna Salad with Avocado and Cucumber

This tuna salad with avocado and cucumber is a quick, fresh and very flavorful recipe for lunch, dinner or a light meal. The cucumber is sliced into thin half-moons and combined with tomato, onion, green bell pepper, tuna and ripe avocado cubes. The simple seasoning with olive oil, salt, black pepper, lemon and fresh herbs makes the salad balanced, colorful and delicious.

Ingredientes
  

  • 1 whole cucumber
  • 1 tomato cut into large pieces
  • 1 onion cut into thin half-moons
  • 1 chopped green bell pepper
  • 2 cans drained tuna
  • 1 ripe avocado cut into cubes
  • olive oil to taste
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 lemon, juiced
  • fresh herbs to taste

Modo de preparo
 

  • Remove part of the cucumber peel, leaving a few strips for a prettier look.
  • Cut off the cucumber ends, slice it in half and cut into thin half-moons.
  • Place the sliced cucumber in a large bowl.
  • Add the chopped tomato, thin half-moon onion slices and chopped green bell pepper.
  • Add the cans of drained tuna to the bowl.
  • Cut the ripe avocado into cubes and add it to the other ingredients.
  • Drizzle generously with olive oil.
  • Season with a pinch of salt and a pinch of black pepper.
  • Squeeze the lemon over the salad.
  • Using two spoons, gently mix everything to combine without mashing the avocado too much.
  • Finish with fresh herbs to taste and mix again.
  • Transfer to a serving platter and serve immediately.

Notas

Leave a few strips of peel on the cucumber to make the salad look prettier. Use ripe but firm avocado so the cubes keep their shape without falling apart too much. Since tuna usually already contains salt, add only a pinch and adjust after mixing. Lemon enhances the flavor and also helps keep the avocado from browning quickly. Serve right after preparing to keep the ingredients fresh and crisp.
