Potato Gratin with Bacon, Onion and Cream Cheese

This potato gratin is a creamy, easy and very flavorful recipe, perfect for lunch or dinner. The parboiled potatoes are layered with cream cheese, sliced bacon, onion, olive oil, salt and oregano, then baked to finish cooking and topped with more cream cheese and plenty of mozzarella cheese to melt and brown.

  • 6 large peeled potatoes
  • water to cover the potatoes
  • cream cheese for the base and topping
  • sliced bacon cut into pieces
  • onion cut into rings
  • olive oil to taste
  • salt to taste
  • oregano to taste
  • mozzarella cheese to taste

Modo de preparo
 

  • Peel the potatoes and cut them into pieces or slices to help them cook more easily.
  • Place the potatoes in a pot, cover with water and cook for a few minutes, just to parboil.
  • Drain the parboiled potatoes and set aside.
  • Spread a layer of cream cheese on the bottom of a baking dish.
  • Add a layer of potatoes over the cream cheese, filling the bottom of the dish well.
  • Distribute pieces of sliced bacon over the potatoes.
  • Add onion rings over the bacon.
  • Repeat the layers with more potatoes, bacon and onion.
  • Finish with a layer of potatoes, covering everything well.
  • Drizzle with olive oil, season with salt and sprinkle oregano on top.
  • Bake for about 20 minutes, until the potatoes finish cooking.
  • Remove from the oven, spread cream cheese over the potatoes and cover with mozzarella cheese.
  • Return to the oven just until the cheese melts and browns.
  • Remove from the oven, cut into portions and serve hot.

Notas

Parboil the potatoes only until they start to soften, as they will finish cooking in the oven. Cut the potatoes to a similar thickness so they bake evenly. Sliced bacon releases flavor while baking, but you can also lightly brown it first for a crispier result. Serve hot to enjoy the melted cheese and creamy cream cheese layer.
