Onion Ring Stuffed Omelet

This onion ring stuffed omelet is a different, practical and very tasty recipe for breakfast, a snack or a light meal. The onion is cut into thick rings, filled with a mixture of eggs, finely chopped onion, salt, black pepper and fresh herbs, then cooked in a skillet with olive oil and finished with black sesame seeds.

Ingredientes
  

  • 2 large onions cut into thick rings
  • 2 eggs
  • salt to taste
  • black pepper to taste
  • fresh parsley and green onion to taste
  • olive oil for greasing the skillet
  • black sesame seeds to taste
  • lettuce leaves for optional decoration

Modo de preparo
 

  • Cut the ends off an onion, then cut a thick slice to form a ring.
  • Carefully remove the center of the onion, keeping the ring whole.
  • Repeat the process with the other onion.
  • Use the removed onion pieces and chop them into very small pieces.
  • Place the chopped onion in a bowl.
  • Add the eggs, salt, black pepper and fresh herbs.
  • Mix very well until smooth.
  • Heat a skillet with a little olive oil.
  • Place the onion rings in the skillet, leaving space between them.
  • Fill the inside of each onion ring with the egg mixture.
  • Sprinkle black sesame seeds on top.
  • Cook until the mixture sets on the bottom.
  • Carefully turn each stuffed onion using one or two spatulas so it does not break.
  • Cook the other side until firm and lightly golden.
  • Remove from the skillet, place on a plate and decorate with lettuce leaves if desired.

Notas

Cut the onions into thick slices so the rings stay firm and can hold the egg filling. Remove the center carefully so the sides do not break. Use the removed onion pieces by chopping them finely and mixing them with the eggs. Cook over low or medium heat so the omelet sets without burning. Turn carefully with two spatulas to keep the shape.
