These stuffed potatoes with bacon and cheese are a delicious, creamy recipe that is perfect for lunch, dinner or a special dish. The potatoes are cut in half, partially hollowed out and cooked with salt and bay leaves. Then they are filled with a creamy mixture of mozzarella, ham, mayonnaise and dried parsley, wrapped with sliced bacon, topped with more cheese and baked until golden and irresistible.

Ingredients
  

  • 4 potatoes
  • 1 teaspoon salt for cooking
  • bay leaves to taste
  • 100 g mozzarella cheese cut into small pieces
  • 100 g ham cut into small pieces
  • 3 tablespoons mayonnaise
  • 1 teaspoon dried parsley
  • sliced bacon for wrapping the potatoes
  • mozzarella cheese to taste for topping
  • enough water to cover the potatoes

Instructions
 

  • Cut each potato in half and remove a small piece from the bottom so they stay steady.
  • Carefully remove the center of the potatoes, forming a cavity for the filling.
  • Place the potatoes in a pot, add enough water to cover, the salt and bay leaves.
  • Turn on the heat and cook for about 10 minutes, until slightly tender but still firm.
  • Meanwhile, place the small mozzarella pieces and chopped ham in a bowl.
  • Add the mayonnaise and dried parsley, mixing well until a creamy filling forms.
  • Remove the potatoes from the pot, drain well and arrange them on a surface or baking dish.
  • Fill all potato cavities with the ham, mozzarella and mayonnaise mixture.
  • Wrap each potato with a slice of bacon and secure with halved toothpicks.
  • Transfer the stuffed potatoes to a baking dish.
  • Add mozzarella cheese on top of each potato.
  • Bake in a preheated oven at 200 degrees for 15 minutes, until gratinated and the bacon is heated through.
  • Remove from the oven and serve while still hot.

Notes

Cook the potatoes only until slightly tender, because they will still go into the oven and need to keep their shape. Remove the center carefully so the sides do not break. Cutting a small piece from the bottom helps the potatoes stay steady in the baking dish. Sliced bacon adds flavor and makes the presentation more attractive. Serve hot to enjoy the creamy filling and melted cheese.
