
Skillet Snack with Bologna and Cheese
This skillet snack with bologna and cheese is a quick, budget-friendly and very tasty recipe for busy days. The creamy batter is made with eggs, heavy cream, wheat flour, salt and baking powder, then mixed with chopped tomato, bologna, fresh herbs, mozzarella and seasonings. The mixture is cooked in portions in a skillet until golden on both sides, creating a snack that is soft inside, browned outside and full of flavor.

Ingredients
- 2 eggs
- 2 tablespoons heavy cream
- 2 tablespoons wheat flour
- 1 pinch salt
- 1 teaspoon baking powder
- 1 chopped tomato
- 200 g chopped bologna
- fresh herbs to taste
- 100 g grated mozzarella cheese
- 1 teaspoon toasted garlic
- 1 pinch dried parsley
- 1 pinch black pepper
- 1 teaspoon oregano
- oil for greasing the skillet
Instructions
- In a bowl, add the eggs, heavy cream, wheat flour, salt and baking powder.
- Mix everything very well until a creamy and smooth batter forms.
- Add the chopped tomato, chopped bologna and fresh herbs to taste.
- Mix well to incorporate the ingredients into the batter.
- Add the grated mozzarella, toasted garlic, dried parsley, black pepper and oregano.
- Mix again until all ingredients are evenly distributed.
- Heat a skillet over low heat, add a little oil and spread it well.
- Place a portion of the batter in the skillet, forming a small or medium snack.
- Let it brown on one side over low heat.
- Flip carefully and let the other side brown as well.
- Remove from the skillet and place on a plate.
- Repeat the process with the remaining batter.
- Cut a portion if desired and serve while still hot.

Notes
Keep the heat low so the snack cooks inside without burning outside. Bologna can be replaced with ham, shredded chicken, sausage or leftover meat. Tomato helps keep the batter moist, but avoid adding too much liquid. Use a nonstick skillet or grease it well with oil to make flipping easier. Serve hot on its own or with your favorite sauce.
