Use plastic wrap or an opened food bag to help roll the beef more easily and press it firmly. The freezer time is important to set the shape and make slicing easier, but do not let it freeze too hard or it will be difficult to cut. Coat each slice well in flour, then egg and finally grated potato, pressing lightly so it sticks. Fry over medium heat so the outside browns and the meat cooks through.
