Modo de preparo
Cook the potatoes in water for about 15 minutes until tender but still firm. Drain.
Use a toothpick to poke holes in the potatoes so they absorb the seasoning better.
Place the potatoes in a container with a lid.
In a bowl, mix olive oil, vinegar, water, onion, bell pepper, herbs, garlic, pepper, and salt.
Pour the marinade over the potatoes, making sure they are well covered.
Gently mix to distribute the ingredients evenly.
Cover and refrigerate for 24 hours before serving.
Serve chilled or at room temperature.
