Ingredients
  

  • 1 kg small potatoes
  • water for cooking
  • 200 ml olive oil
  • 200 ml vinegar
  • 200 ml water
  • 1 chopped onion
  • 1 chopped red bell pepper
  • fresh herbs (parsley/green onions) to taste
  • 5 cloves chopped garlic
  • pepper to taste
  • salt to taste

Instructions
 

  • Cook the potatoes in water for about 15 minutes until tender but still firm. Drain.
  • Use a toothpick to poke holes in the potatoes so they absorb the seasoning better.
  • Place the potatoes in a container with a lid.
  • In a bowl, mix olive oil, vinegar, water, onion, bell pepper, herbs, garlic, pepper, and salt.
  • Pour the marinade over the potatoes, making sure they are well covered.
  • Gently mix to distribute the ingredients evenly.
  • Cover and refrigerate for 24 hours before serving.
  • Serve chilled or at room temperature.
