Baked Sausage with Potatoes

This baked sausage with potatoes is a practical, creamy and very flavorful recipe for lunch or dinner. The sausages are seasoned with olive oil, black pepper, oregano, paprika and garlic, then baked over a base of onion and potatoes. To finish, they are topped with a creamy mixture of tomato, mozzarella cheese and mayonnaise, then returned to the oven until gratinated and delicious.

Ingredients
  

  • 800 g sausage cut in half
  • 3 tablespoons olive oil
  • black pepper to taste
  • oregano to taste
  • paprika to taste
  • 3 cloves chopped garlic
  • 1 onion cut into half-moons
  • 4 potatoes cut into pieces or slices
  • 1 pinch salt
  • 1 chopped tomato
  • 150 g grated mozzarella cheese
  • 200 g mayonnaise

Instructions
 

  • Cut the sausages in half and spread olive oil over all of them.
  • Season the sausages with black pepper, oregano, paprika and chopped garlic, distributing the seasonings well. Set aside.
  • In a baking dish, place the onion cut into half-moons and separate the layers well to form a base.
  • Add the potatoes over the onion, covering the spaces in the baking dish well.
  • Season the potatoes with a pinch of salt and black pepper to taste.
  • Place the seasoned sausages over the potatoes and finish with a little more olive oil.
  • Cover with aluminum foil and bake in a preheated oven at 180 degrees for 40 minutes.
  • While it bakes, mix the chopped tomato, grated mozzarella and mayonnaise in a bowl until well combined.
  • Remove the baking dish from the oven, take off the aluminum foil and spread the topping over the sausages and potatoes.
  • Return to the oven for another 15 minutes, until gratinated and the topping is heated through.
  • Remove from the oven and serve hot for lunch or dinner.

Notes

Cut the sausages in half so they absorb the seasonings better and bake more evenly. Aluminum foil helps the potatoes cook without drying out. For more golden potatoes, remove the foil during the final minutes before adding the topping. The mayonnaise, tomato and mozzarella mixture makes the recipe creamy and gratinated, but it can be adjusted to taste. Serve with white rice, salad or vegetables.
