Notes
Cook the potatoes until very tender so the base becomes creamy and easy to spread. Sauté the ground beef well before assembling, as this reduces excess liquid and makes the filling more flavorful. When opening the spaces in the potatoes, make firm cavities to hold the beef and cheese. Use enough mozzarella to gratinate well, but not so much that it hides the flavor of the beef. Serve hot, right after it comes out of the oven.
