
Leftover Rice Fritters in the Air Fryer
These leftover rice fritters in the Air Fryer are a practical, budget-friendly and delicious way to use cooked rice stored in the refrigerator. The rice is mixed with grated carrot, eggs, tomato, fresh herbs, Parmesan cheese, seasonings and wheat flour until it forms a moldable mixture. Then the fritters are cooked in the Air Fryer until golden outside and soft inside, perfect to serve with mayonnaise and mustard sauce.

Ingredients
- 2 cups cooked rice from the previous day
- 2 pieces grated carrots
- 2 pieces eggs
- fresh herbs to taste
- 1 piece chopped tomato
- 50 g grated Parmesan cheese
- 1 teaspoon salt
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 3 tablespoons wheat flour
- mayonnaise to taste for the sauce
- mustard to taste for the sauce
Instructions
- Place the cooked rice from the previous day in a large bowl.
- Add the grated carrots, eggs, fresh herbs, chopped tomato and grated Parmesan cheese.
- Season with salt, paprika and black pepper.
- Mix very well to incorporate all the ingredients into the rice.
- Add the wheat flour gradually, mixing until a moldable mixture forms.
- If the mixture is still too moist, add a little more flour as needed.
- Take a portion of the mixture with a spoon.
- Shape it with your hands into an elongated fritter, similar to a kibbeh shape.
- Place the shaped fritter on a plate and repeat with the remaining mixture.
- Arrange the fritters in the Air Fryer basket, leaving space between them.
- Set the Air Fryer to 200 degrees for 10 minutes.
- Remove the fritters when they are golden and firm.
- Prepare a sauce by mixing mayonnaise and mustard to taste.
- Place the fritters on a plate and serve while still hot with the sauce.

Use cold, loose rice from the previous day to make shaping the fritters easier. Add the wheat flour gradually, since the amount may vary depending on the moisture of the rice and vegetables. Shape the fritters with lightly damp or greased hands to prevent sticking. For an even more golden surface, brush with a little olive oil before placing in the Air Fryer. Serve hot with mayonnaise and mustard sauce.
