
Banana Roll with Mozzarella, Peanuts and Ganache
This banana roll with mozzarella, peanuts and ganache is a different, creamy and very flavorful dessert. The cooked bananas are mashed, spread over food-safe plastic, filled with crushed roasted peanuts and mozzarella cheese, then wrapped in parchment paper and baked. To finish, it is topped with chocolate ganache made with cream and more crushed peanuts.

Ingredients
- 7 pieces bananas
- boiling water enough to cook the bananas
- 80 g crushed roasted peanuts
- 4 slices mozzarella cheese
- 100 g melted chocolate
- 2 tablespoons cream
- crushed roasted peanuts for finishing
Instructions
- Place the cut bananas in a saucepan with boiling water.
- Let them cook for about 15 to 20 minutes, until very soft.
- Turn off the heat, drain the bananas well and let them cool slightly.
- Peel the cooked bananas and place the pulp in a bowl.
- Mash the bananas very well with a masher until a soft mixture forms.
- Spread the mashed banana over food-safe plastic, forming an even layer.
- Distribute the crushed roasted peanuts on top and press lightly to fix them.
- Place the mozzarella cheese slices over the banana with peanuts.
- With the help of the plastic, close the banana mixture over the filling, covering the cheese and sealing the sides as well.
- Carefully transfer to a sheet of parchment paper.
- Wrap well in the parchment paper, closing the ends to keep the shape.
- Place in an oven-safe pan or bowl and bake in a preheated oven at 180 degrees for 25 minutes.
- Remove from the oven and carefully open the parchment paper.
- Mix the melted chocolate with the cream until a smooth ganache forms.
- Spread the ganache over the banana dessert.
- Finish with more crushed roasted peanuts on top.
- Cut a piece and serve warm or at room temperature.

Notes
Cook the bananas until very soft to make mashing and shaping easier. Drain well before peeling to avoid excess water in the mixture. Use food-safe plastic or a clean food-safe bag to help close the banana around the filling. Wrap well in parchment paper before baking to keep the shape. Add the ganache after the dessert comes out of the oven.
