This all-purpose homemade seasoning is a practical preparation that makes everyday cooking easier. Made with garlic, onion, onion stems, cilantro or parsley and a drizzle of olive oil, it becomes finely blended, aromatic and ready to use on meat, chicken, fish, rice, beans, vegetables and many other recipes. Stored in a lidded jar in the refrigerator, it saves time and adds more flavor to your dishes.

  • food processor For blending the garlic, onion, stems and herbs.
  • knife For cutting the onions into large pieces.
  • cutting board For supporting the ingredients during preparation.
  • Jar with lid For storing the seasoning in the refrigerator.
  • spoon For transferring and removing the seasoning when using.

Ingredients
  

  • 2 heads peeled garlic
  • onion stems
  • 2 white onions cut into large pieces
  • cilantro or parsley to taste
  • 1 drizzle olive oil

Instructions
 

  • Peel the two heads of garlic and place the cloves in the food processor.
  • Add the onion stems to the food processor to use their flavor.
  • Process until the garlic and stems are well chopped.
  • Add the white onions cut into large pieces.
  • Process again until the onion is well chopped.
  • Add the whole cilantro or replace it with parsley if preferred.
  • Add a drizzle of olive oil to help blend and give texture to the seasoning.
  • Process everything once more until the seasoning is finely blended and uniform.
  • Transfer the seasoning to a clean container.
  • Place it in a jar with a lid and store in the refrigerator.
  • Use the amount needed to season meat, chicken, fish or other everyday recipes.

Use a clean, dry jar with a lid to preserve the seasoning better. Always remove the amount needed with a clean spoon to avoid contamination. Onion stems are used because they add flavor and prevent waste. Cilantro can be replaced with parsley, according to taste. In the refrigerator, the seasoning can last up to one month when stored properly. Adjust the amount used in recipes according to the salt and other seasonings in the dish.
