Creamy Skillet Potatoes Without Meat

Ingredients
  

  • 900 g potatoes cut into cubes, with skin
  • water for cooking the potatoes
  • 1 large spoon butter
  • 2 cloves garlic, crushed
  • 1 onion, chopped
  • 1 drizzle olive oil
  • 1 tomato, chopped
  • to taste ground coriander
  • to taste black pepper
  • 100 g heavy cream
  • to taste chopped parsley (or green herbs)

Instructions
 

  • Place the cubed potatoes in a pot, cover with water, and cook until al dente.
  • Drain the cooked potatoes and set aside.
  • Heat a skillet, add the butter, and let it melt.
  • Add the crushed garlic and sauté until lightly golden.
  • Add the drained potatoes and mix well, lightly frying them with the garlic until they begin to brown.
  • Remove the potatoes from the skillet and set aside.
  • In the same skillet, add the chopped onion, a drizzle of olive oil, and the chopped tomato.
  • Season with ground coriander and black pepper to taste. Mix well.
  • Cover the skillet and let it cook for a few minutes in the tomato’s own juices.
  • Return the potatoes to the skillet and mix well with the sautéed mixture.
  • Add the heavy cream over the potatoes and mix until creamy.
  • Let it cook for a few more minutes to reduce the liquid and enhance the flavors.
  • Finish with chopped herbs, turn off the heat, and serve immediately.

Cook the potatoes only until al dente so they don’t fall apart when sautéed. Adjust black pepper and coriander powder to taste.
