Leftover Rice with Cabbage, Bacon and Bologna

This leftover rice recipe is practical, colorful and very flavorful, turning cooked rice into a complete meal. The rice is sautéed with garlic, onion, bacon, bologna, cabbage, red bell pepper, green bell pepper, soy sauce and fresh herbs, becoming well seasoned, fluffy and perfect for lunch or dinner.

Equipment

  • Pot with lid For sautéing the ingredients and finishing the rice.
  • knife For cutting the cabbage, bologna, bacon, onion and bell peppers.
  • cutting board For preparing the ingredients.
  • spoon or spatula For mixing the rice and seasonings.
  • Measuring cup For measuring the cooked rice.

Ingredients
  

  • cabbage cut into medium pieces
  • bologna cut into small pieces
  • chopped bacon
  • oil for sautéing
  • 3 cloves chopped garlic
  • 1 finely chopped onion
  • 1/2 chopped red bell pepper
  • 1/2 chopped green bell pepper
  • 2 cups cooked rice
  • 2 tablespoons soy sauce
  • fresh parsley and green onion to taste

Instructions
 

  • Cut the cabbage into medium pieces, not too large and not too small.
  • Cut the bologna into small pieces and chop the bacon as well.
  • Heat a little oil in a pot.
  • Add the chopped garlic, finely chopped onion, bacon and bologna.
  • Sauté well, letting the garlic, onion, bologna and bacon fry lightly.
  • Add the red bell pepper, green bell pepper and chopped cabbage.
  • Mix well, cover the pot and cook for about 2 minutes so the vegetables soften slightly.
  • Add the cooked rice, soy sauce and fresh parsley and green onion to taste.
  • Mix everything very well until the rice is colorful and coated with the seasonings.
  • Cover the pot again for 2 more minutes so the rice absorbs the flavors.
  • Turn off the heat and serve the rice while hot.

Notes

Use cooked and cooled rice so it stays fluffier when sautéed. Cut the cabbage into medium pieces so it cooks lightly without losing texture. Soy sauce is already salty, so taste before adding more salt. This recipe can also include grated carrot, corn, peas or other vegetables you have on hand.
