
Eggs in Tomato Sauce with Cheese
These eggs in tomato sauce with cheese are a quick, practical and very flavorful recipe for when you need lunch or dinner without complication. Garlic is browned in oil, then tomato sauce is added and the eggs cook directly in the well-seasoned sauce. To finish, melted mozzarella cheese and fresh herbs make the dish creamy, nutritious and perfect to serve with white rice or enjoy on its own.

Ingredients
- oil for sautéing
- 3 cloves finely chopped garlic
- 300 g tomato sauce
- 6 eggs
- salt to taste
- black pepper to taste
- mozzarella cheese to taste
- fresh parsley and green onion to taste optional
Instructions
- Add a little oil to a skillet and heat over medium heat.
- Add the finely chopped garlic and fry until golden.
- Add the tomato sauce and mix well to incorporate the garlic flavor.
- Let the sauce begin to boil.
- Crack the eggs directly over the sauce, spreading them around the skillet.
- Season the eggs with salt and black pepper to taste.
- Cover the skillet and cook over low heat until the eggs are almost at your desired doneness.
- Add mozzarella cheese over the eggs.
- Finish with fresh herbs to taste, if desired.
- Cover again for a few minutes, just until the cheese melts.
- Turn off the heat and serve hot with white rice or as you prefer.

Cook the eggs over low heat so they set without burning the sauce. If you prefer softer yolks, reduce the cooking time; if you like firmer yolks, leave them covered for a few extra minutes. Mozzarella cheese can be replaced with another cheese that melts well. Serve with white rice, bread or a simple salad for a quick and complete meal.
