
Quick Instant Noodles with Sausage and Eggs
These quick instant noodles with sausage and eggs are a practical, budget-friendly and flavorful meal for busy days. The noodles are cooked quickly and mixed with a sauté of butter, garlic, green bell pepper and red bell pepper. Fried sausage pieces, seasoned eggs and a touch of soy sauce are added, creating a simple, filling and tasty dish for lunch or dinner.

Ingredients
- water for cooking the noodles
- 2 packs instant noodles
- 2 tablespoons butter
- 2 cloves chopped garlic
- 1/2 chopped green bell pepper
- 1/2 chopped red bell pepper
- 2 sausages cut into small pieces
- 2 eggs
- 1/2 teaspoon salt
- black pepper to taste
- soy sauce to taste
Instructions
- Add water to a pot and heat it.
- Add the instant noodles and cook until tender.
- While the noodles cook, melt the butter in a skillet or large pan.
- Add the chopped garlic, green bell pepper and red bell pepper.
- Sauté the seasonings well until fragrant and slightly softened.
- Drain the cooked noodles and place them in the pan with the sautéed seasonings.
- Mix the noodles with the seasonings and move them to one side of the pan.
- Add the sausage pieces to the empty side of the pan and fry for a few minutes.
- Mix the fried sausages into the noodles.
- In a bowl, crack the eggs and season with salt and black pepper.
- Quickly beat the eggs with a fork.
- Pour the eggs onto the empty side of the pan and fry until set.
- Mix the fried eggs into the noodles with sausage.
- Finish with soy sauce to taste and mix well.
- Turn off the heat, transfer to a plate and serve immediately.

Cook the instant noodles only until tender, so they do not overcook when returned to the pan. Sauté the garlic and bell peppers well in butter to make the base more flavorful. Fry the sausage pieces before mixing them into the noodles for better texture. Soy sauce is already salty, so use only a little salt in the eggs and adjust at the end if needed. Serve right after preparing to keep the noodles loose.
