These fluffy banana fritters with lemon zest are a quick, practical and delicious recipe for breakfast, an afternoon snack or a simple dessert. The batter is made with mashed banana, egg, sugar, cream, wheat flour, baking powder and lemon zest, resulting in soft and fragrant fritters. After being fried in small portions, they become golden on the outside, fluffy inside and even tastier with sugar and cinnamon on top.

Ingredients
  

  • 1 mashed banana
  • 1 egg
  • 4 tablespoons sugar
  • 150 g cream
  • 1 lemon zest
  • 150 g sifted wheat flour
  • 1 tablespoon baking powder
  • oil for frying
  • sugar with cinnamon for sprinkling

Instructions
 

  • Mash the banana well with a fork and set aside.
  • In a bowl, add the egg and sugar.
  • Mix very well until the egg and sugar are combined.
  • Add the cream and mix again.
  • Add the reserved mashed banana and mix well.
  • Add the lemon zest to the batter.
  • Add the sifted wheat flour and baking powder.
  • Mix everything very well until a smooth and fluffy batter forms.
  • Heat a little oil in a skillet over low heat.
  • Spoon small portions of batter into the skillet to form the fritters.
  • Fry until golden on one side.
  • Turn with a spatula and let the other side brown.
  • Remove the fritters and place them on a plate.
  • Sprinkle sugar with cinnamon on top, if desired, and serve immediately.

Notes

Mash the banana well so it blends better into the batter. Sift the wheat flour to avoid lumps and make the fritters lighter. Use low heat so they brown on the outside and cook inside without burning. Turn the fritters only when the bottom is golden and firm. The sugar and cinnamon topping is optional, but it adds a special touch at the end.
