This baked omelet is a quick, practical and colorful recipe made with seasoned eggs, yellow bell pepper, green bell pepper, tomato, fresh herbs and cheese. Baked until firm, it keeps the eggs nicely set, has a beautiful texture and can be served for breakfast, a light lunch or a quick dinner.

Ingredients
  

  • 9 eggs
  • salt to taste
  • black pepper to taste
  • ground coriander to taste
  • yellow bell pepper chopped into small pieces
  • green bell pepper chopped into small pieces
  • chopped tomato
  • fresh parsley and green onion to taste
  • cheese to taste

Instructions
 

  • Place the eggs in an oven-safe baking dish.
  • Season with salt, black pepper and ground coriander to taste.
  • Add the yellow bell pepper and green bell pepper chopped into small pieces.
  • Add the chopped tomato and fresh parsley and green onion to taste, distributing everything well over the eggs.
  • Place cheese on top, spreading it evenly.
  • Bake in a preheated oven at 180 °C for about 12 minutes, or until the eggs are firm.
  • Remove from the oven carefully and let it rest for a few moments.
  • Cut into portions and serve the omelet while still hot.

Notes

Use a well-greased or nonstick baking dish to make removing the omelet easier. The seasonings can be adjusted to taste with dried herbs, paprika, oregano or other chopped vegetables. Avoid adding too much watery tomato so the omelet stays firm after baking.
