Golden Butter Potatoes with Garlic and Lemon

These golden butter potatoes with garlic and lemon are simple, flavorful and irresistible. The potatoes are parboiled until slightly tender and then browned in a skillet with butter. At the end, they are seasoned with oregano, paprika, black pepper, chopped garlic, lemon juice and fresh herbs, becoming crisp on the outside, soft on the inside and very aromatic.

Ingredients
  

  • 6 small potatoes cut in half
  • 1 teaspoon salt for cooking the potatoes
  • water for cooking the potatoes
  • 3 tablespoons butter
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 3 cloves chopped garlic
  • 1 lemon, juiced
  • fresh herbs to taste

Instructions
 

  • Cut the potatoes in half, preferably using smaller potatoes for easier preparation.
  • Place the potatoes in a pot, cover with water and add the salt.
  • Cook for about 10 minutes, only until slightly tender, without falling apart.
  • Drain the potatoes well and set aside.
  • In a skillet, add 2 tablespoons of butter and let it melt completely.
  • Add the potatoes to the skillet and arrange them well so they can brown.
  • Let them brown on one side, then turn carefully to brown the other side.
  • When the potatoes are dry and golden on the outside, add the oregano, paprika and black pepper.
  • Add the chopped garlic, 1 more heaping tablespoon of butter and the lemon juice.
  • Mix very well so the garlic fries with the potatoes and all the seasonings coat the pieces.
  • Finish with fresh herbs to taste and mix briefly.
  • Serve the potatoes while hot, golden on the outside and soft on the inside.

Notes

Do not overcook the potatoes so they do not fall apart in the skillet. They should be only slightly tender before browning. Use medium heat so the butter browns the potatoes without burning the garlic. Add the lemon at the end for a fresher flavor. Serve as a side dish for meat, chicken, fish or even as a snack.
