Stuffed Potatoes with Meatballs and Cheese

These stuffed potatoes with meatballs and cheese are a complete, flavorful recipe perfect for lunch or dinner. The cooked potatoes are opened in the center, filled with cheese, seasoned ground beef balls made with egg, breadcrumbs, fresh herbs, salt and pepper, then baked until golden and well filled.

Equipment

  • bowl For mixing the ground beef with the seasonings.
  • spoon For starting the beef mixture.
  • knife For opening the center of the potatoes.
  • baking pan For baking the stuffed potatoes.
  • Parchment paper For lining the pan and preventing sticking.
  • oven For baking the potatoes with meatballs and cheese.

Ingredients
  

  • 500 g ground beef
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • fresh parsley and green onion to taste
  • 2 tablespoons breadcrumbs
  • 6 cooked and peeled potatoes
  • olive oil to taste
  • cheese in pieces or grated cheese to taste

Instructions
 

  • In a bowl, add the ground beef, egg, salt, black pepper, fresh herbs and breadcrumbs.
  • Mix first with a spoon and then with your hands until all ingredients are well incorporated.
  • Set the seasoned beef aside while preparing the potatoes.
  • With the potatoes already cooked and peeled, make an opening in the center of each one using a knife.
  • Place the potatoes on a baking pan lined with parchment paper and arrange them well.
  • Drizzle the potatoes with olive oil.
  • Place small pieces of cheese or grated cheese at the bottom of each potato opening.
  • Shape the seasoned beef into small firm balls.
  • Place one meatball inside each potato, fitting it well in the center.
  • Finish by adding more cheese on top of the stuffed potatoes.
  • Bake in a preheated oven at 180 degrees for about 40 minutes, until the beef is cooked and the cheese melts.
  • Remove from the oven and serve while hot.

Notes

Cook the potatoes only until tender but still firm, so they do not crack when opened. Shape the meatballs firmly so they fit better inside the potatoes. You can use cheese in pieces or grated cheese, and finish with a little more fresh herbs after baking if desired.
