
Seasoned Pickled Potatoes
A delicious pickled potato recipe, full of flavor and perfectly seasoned, ideal as a side dish or appetizer.

Ingredients
- 1 kg small potatoes
- water for cooking
- 200 ml olive oil
- 200 ml vinegar
- 200 ml water
- 1 chopped onion
- 1 chopped red bell pepper
- fresh herbs (parsley/green onions) to taste
- 5 cloves chopped garlic
- pepper to taste
- salt to taste
Instructions
- Cook the potatoes in water for about 15 minutes until tender but still firm. Drain.
- Use a toothpick to poke holes in the potatoes so they absorb the seasoning better.
- Place the potatoes in a container with a lid.
- In a bowl, mix olive oil, vinegar, water, onion, bell pepper, herbs, garlic, pepper, and salt.
- Pour the marinade over the potatoes, making sure they are well covered.
- Gently mix to distribute the ingredients evenly.
- Cover and refrigerate for 24 hours before serving.
- Serve chilled or at room temperature.
