Skillet Egg Roll with Lettuce

This egg roll with lettuce is a simple, different and tasty recipe for breakfast or a quick snack. The egg whites are mixed with very finely chopped lettuce and cooked in a skillet with olive oil, then the beaten yolks are added to create a soft, beautiful and nutritious roll.

  • knife For cutting the lettuce into thin pieces.
  • cutting board For supporting the lettuce while cutting.
  • Bowls For separating whites, yolks and mixing ingredients.
  • spoon For helping separate the yolks from the whites.
  • fork or whisk For beating the yolks until smooth.
  • skillet For cooking and rolling the eggs.
  • spatula For rolling carefully.
  • Serving dish For serving and cutting the finished roll.

Ingredients
  

  • 1 leaf lettuce cut into very thin pieces
  • 2 eggs
  • olive oil for greasing the skillet
  • ketchup for serving, optional

Instructions
 

  • Cut the lettuce leaf into very thin pieces and set aside.
  • Crack the eggs into a bowl and carefully separate the yolks from the whites.
  • Place the yolks in another container and set aside.
  • Mix the chopped lettuce with the egg whites until evenly distributed.
  • Beat the yolks until smooth and homogeneous.
  • Heat a skillet with a little olive oil and spread the egg whites with lettuce.
  • When the mixture sets, start rolling it carefully with a spatula.
  • Add the beaten yolks to the remaining part of the skillet and spread well.
  • Let the yolks cook until set, then roll them together with the egg white and lettuce part to form a roll.
  • Transfer to a serving dish, cut into pieces and serve. Add ketchup if desired.

Notes

Separate the yolks carefully so they do not break and mix the lettuce well into the egg whites for even distribution. Use low or medium-low heat so the eggs set without burning. Roll gently with a spatula, as the egg layer can tear if it is too thin. Serve plain or with ketchup, if desired.
