
Breadless Egg and Cream Cheese Sandwich
This breadless egg and cream cheese sandwich is a quick, soft and very flavorful recipe for breakfast or a snack. The batter uses only eggs, cream cheese and baking powder, cooks in the microwave in just a few minutes, and is then filled with ham and mozzarella cheese. To finish, it goes into the sandwich maker with a little butter until lightly browned and the cheese melts.

Ingredients
- 2 eggs
- 2 tablespoons cream cheese
- 1 teaspoon baking powder
- 3 slices ham
- 4 slices mozzarella cheese
- butter for greasing the sandwich maker
Instructions
- In a bowl, add the eggs and cream cheese.
- Mix well with a whisk until the batter is very smooth.
- Add the baking powder and stir only until incorporated.
- Pour the batter into a microwave-safe bowl.
- Microwave for about 2 minutes and 30 seconds, until the batter is set.
- Remove carefully and place the cooked batter on a cutting board.
- Fill with the ham and mozzarella cheese slices.
- Roll the batter carefully, forming a stuffed sandwich.
- Cut in half to make two sandwiches.
- Grease the sandwich maker with a little butter on both sides.
- Place the sandwich in the sandwich maker, close it and leave for about 1 minute, just to lightly brown it and melt the cheese.
- Remove, cut if desired and serve hot.

Notes
Mix the eggs with the cream cheese very well until smooth before adding the baking powder. After adding the baking powder, stir only enough to incorporate it. Use a microwave-safe bowl and watch the time, as it may vary depending on the appliance power. The batter becomes soft, so roll it carefully. The filling can be adapted with shredded chicken, fresh cheese, tomato or other ingredients you prefer.
