
Skillet Onion, Egg, Cheese and Toast Snack
This skillet onion, egg, cheese and toast snack is a quick, practical and very flavorful recipe for breakfast or an afternoon snack. Red onions are sliced and used as the base in the skillet, then topped with lightly mixed eggs, salt, black pepper, mozzarella cheese and toast. Cooked over low heat with the pan covered, the result is a complete, well-cooked snack with a wonderful onion flavor.
Equipment
- Skillet with lid For cooking the snack over low heat.
- knife For slicing the onions into rings.
- cutting board For supporting the onions while cutting.
- fork For lightly breaking the yolks.
- spatula For helping loosen the sides if needed.
- plate For flipping and serving the finished snack.
Ingredients
- 2 red onions sliced into rings
- oil for greasing the skillet
- 8 eggs
- salt to taste
- black pepper to taste
- mozzarella cheese to taste
- enough toast slices to cover the skillet
Instructions
- Cut the red onions into rings, not too thin and not too thick.
- Grease the bottom of a skillet with a little oil, while the heat is still off.
- Arrange the onion rings on the bottom of the skillet until the base is well covered.
- Add the eggs over the onions.
- Turn the heat to low and, using a fork, lightly break the yolks to mix the eggs slightly.
- Season with salt and black pepper to taste.
- Add mozzarella cheese over the eggs.
- Cover the surface with toast slices, filling the entire skillet.
- Cover the skillet and cook over low heat until the eggs are set and the cheese has melted.
- Turn off the heat and carefully flip the snack onto a plate.
- Cut into pieces and serve while still hot for breakfast or an afternoon snack.

Notes
Keep the heat low throughout the preparation so the eggs cook evenly without burning the onion. Lightly breaking the yolks helps spread the eggs better across the skillet. Use a nonstick skillet or grease it well with oil to make turning onto the plate easier. The toast helps form a firm base and makes the snack more complete. Serve while still hot to enjoy the melted cheese.
