Creamy Chicken in Peanut Sauce

This chicken in peanut sauce is a different, creamy and very flavorful recipe for lunch or dinner. Chicken thighs and drumsticks are seasoned with salt and black pepper, browned in a skillet and then cooked in a rich sauce made with blended peanuts, garlic, onion, tomato sauce and mustard.

Equipment

  • bowl For seasoning the chicken.
  • Large skillet For browning the chicken and cooking the sauce.
  • blender For blending the peanuts with water.
  • knife For chopping the onion and garlic.
  • cutting board For preparing the ingredients.
  • spoon or spatula For stirring the sauté and sauce.

Ingredients
  

  • chicken thighs and drumsticks
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • oil for frying
  • 1 chopped onion
  • 3 cloves finely chopped garlic
  • 300 g peanuts
  • 2 cups water
  • 1 tablespoon tomato sauce
  • 1 tablespoon mustard
  • extra salt to adjust

Instructions
 

  • Place the chicken thighs and drumsticks in a bowl and season with salt and black pepper.
  • Mix well with your hands so the seasoning coats all the meat.
  • Heat a skillet with a little oil and place the chicken pieces side by side.
  • Let the chicken brown well on one side before turning.
  • Turn the pieces and brown the other side as well.
  • Remove the browned chicken from the skillet and set aside.
  • In the same skillet, add the chopped onion and finely chopped garlic.
  • Sauté for about 2 minutes, until the onion and garlic are fragrant.
  • In a blender, add the peanuts and 1 cup of water.
  • Blend until a peanut paste or sauce forms.
  • Add the tomato sauce and mustard to the skillet sauté and mix.
  • Return the reserved chicken to the skillet.
  • Pour the peanut sauce over the chicken and add 1 more cup of water.
  • Mix well to combine the peanut paste with the water and adjust the salt if needed.
  • Cook for about 20 minutes, until the chicken is cooked through and the sauce is creamy.
  • Turn off the heat and serve the chicken with plenty of peanut sauce on top.

Notes

Brown the chicken well before adding the sauce to build more flavor. Use the same skillet to take advantage of the browned bits from the meat and enrich the sauté. The peanut sauce thickens as it cooks, so adjust the water if you want a thinner sauce. Taste before finishing and adjust the salt carefully.
