Chicken Bread without Wheat Flour

This chicken bread without wheat flour is a nutritious, soft and very practical recipe for a snack, breakfast or even a light meal. The dough is made in a food processor with cooked seasoned chicken breast, eggs, milk, fine rolled oats and baking powder, then baked with sesame seeds on top until golden and fluffy.

Ingredients
  

  • 350 g cooked and well-seasoned chicken breast
  • 4 eggs
  • 1/2 cup milk
  • 1 cup fine rolled oats or oat flour
  • 1 tablespoon baking powder
  • olive oil for greasing the pan
  • oat flour for dusting the pan
  • sesame seeds to taste for topping

Instructions
 

  • Place the cooked and well-seasoned chicken breast in the food processor.
  • Process until the chicken is finely shredded.
  • Add the eggs to the processed chicken.
  • Cover the processor and blend again until a dough forms.
  • Add the milk and fine rolled oats or oat flour.
  • Blend until the dough is smooth and homogeneous.
  • Add the baking powder and blend briefly, just to mix.
  • Transfer the dough to a bowl if you want easier handling.
  • Grease a pan with olive oil, spreading it well over the bottom and sides.
  • Sprinkle oat flour on the bottom of the pan.
  • Pour the bread dough into the pan and spread evenly.
  • Finish with sesame seeds on top.
  • Bake in a preheated oven at 180 degrees for 20 to 30 minutes, until set and lightly golden.
  • Remove from the oven, let it cool slightly, slice and serve.

Notes

Use cooked and well-seasoned chicken so the bread has more flavor. Fine rolled oats can be replaced with oat flour using the same amount. Mix the baking powder briefly, just to incorporate it, without overprocessing. Grease the pan well with olive oil and sprinkle oat flour to make unmolding easier.
