Cold Pasta Salad with Fruit

This cold pasta salad with fruit is an easy, creamy and different recipe, perfect to serve chilled for lunches, parties or special occasions. Cooked pasta is mixed with a sweet-and-savory sauce made with mayonnaise, cream, sweetened condensed milk, prunes and raisins. Pineapple, apple and green apple make the salad colorful, fresh and balanced between sweet and savory flavors.

Ingredients
  

  • 250 g pasta
  • 1 teaspoon salt for cooking the pasta
  • water to cover the pasta
  • 5 tablespoons mayonnaise
  • 200 g cream
  • 3 tablespoons sweetened condensed milk
  • chopped prunes to taste
  • raisins to taste
  • pineapple chopped into small pieces
  • 1 apple chopped into small pieces
  • 1 green apple chopped into small pieces
  • 1 pinch salt for finishing
  • 1 pinch black pepper

Instructions
 

  • Place the pasta in a pot, add the salt and cover with water.
  • Cook for about 10 minutes, until the pasta is tender but not falling apart.
  • Drain the pasta and set aside to cool while preparing the sauce.
  • In a bowl, add the mayonnaise, cream and sweetened condensed milk.
  • Add the chopped prunes and raisins to taste.
  • Mix well until a creamy and smooth sauce forms.
  • Cut the pineapple into small pieces.
  • Cut the apple and green apple into small pieces.
  • Place the chopped fruit in a large bowl.
  • Add the prepared sauce over the fruit and mix well.
  • Add the cooked pasta, a pinch of salt and a pinch of black pepper.
  • Mix gently until the pasta, fruit and sauce are well coated.
  • Transfer to a baking dish or serving dish and spread evenly.
  • Serve right away or refrigerate to chill before serving.

Notes

Cook the pasta only until tender, without letting it fall apart, so it keeps a good texture in the salad. Let the pasta cool before mixing it with the sauce to prevent the salad from becoming heavy. The amount of prunes and raisins can be adjusted to taste. For a more refreshing salad, refrigerate before serving. Mix gently so the fruit pieces do not break.
