Ingredients
  

  • 20 g dry yeast
  • 6 cups all-purpose flour
  • 100 ml water
  • cold water as needed
  • 2 tablespoons salt
  • 2 tablespoons sugar
  • 3 tablespoons butter

Instructions
 

  • Mix 10g of yeast with 4 tablespoons of flour and 100 ml of water. Let rest for 15 minutes.
  • Add the remaining 10g of yeast, salt, and sugar, mixing well.
  • Add the flour and cold water gradually until a dough forms.
  • Knead the dough well until smooth and no longer sticky.
  • Add the butter and knead again until fully incorporated.
  • Let the dough rest for 15–20 minutes until it doubles in size.
  • Divide the dough into portions of about 60g and shape into rolls.
  • Let rest again for 30 minutes.
  • Score the tops lightly and bake at 200°C (390°F) for 30 minutes with steam in the oven.

Notes

Use very cold water for better dough texture. Placing a pan with water in the oven creates steam and helps achieve a crispy crust.
