
Marinated Whole Chicken with Potatoes
This marinated whole chicken with potatoes is an incredible, well-seasoned and very flavorful recipe for lunch or dinner. The chicken is cut in half, seasoned with tomato, onion, garlic, salt, black pepper, dried parsley and paprika, then left to marinate so it absorbs the flavors. It is then browned in oil, cooked with the sautéed seasoning, butter, bay leaves and fried potatoes, becoming juicy and aromatic.

Ingredientes
- 1 whole chicken cut in half
- 1 chopped tomato
- 1 chopped onion
- 3 cloves finely chopped garlic

- 5 potatoes cut for frying

Modo de preparo
- Cut the whole chicken in half.
- Remove the rib section that will not be used and also remove the wing tips.
- In a bowl, add the chopped tomato, chopped onion and finely chopped garlic.
- Add the salt, black pepper, dried parsley and paprika.
- Mix all the seasoning ingredients very well.
- Place the chicken in a dish and spread the seasoning all over the meat, coating both sides well.
- Cover with plastic wrap and let it marinate for 2 hours.
- After marinating, heat oil in a large pan and add the chicken to fry.
- Let it brown well on one side before turning.
- Turn the chicken and brown the other side as well.
- Remove the browned chicken from the pan and place it in a bowl.
- In the same oil, fry the potatoes until golden.
- Remove the potatoes and place them on a plate.
- Drain the excess oil from the pan, keeping only a little for sautéing.
- In the same pan, sauté the leftover marinade seasoning until well reduced and fragrant.
- Return the chicken to the pan and arrange the potatoes around it.
- Add a little butter over the chicken and add bay leaves.
- Add a little water, cover and cook until the chicken is tender and flavorful.
- Remove the chicken from the pan, serve with the potatoes on the side and enjoy.

Let the chicken marinate for at least 2 hours so the seasoning penetrates the meat well. When frying, wait until one side is well browned before turning to keep the chicken more beautiful and flavorful. Use the same oil and pan to capture all the chicken flavor in the sautéed seasoning.
