Wheat-Free Banana Pancake with Cream Cheese
This wheat-free banana pancake with cream cheese is a practical, quick and delicious option for breakfast or an afternoon snack. The batter uses only mashed banana, eggs and cream cheese, turning soft, lightly sweet and easy to cook in a skillet. Notes
Mash the bananas well so the batter becomes smoother and easier to spread. Always cook over low heat with the skillet covered so the pancake sets without burning. Flip carefully with a wide spatula, because the wheat-free batter is more delicate. Grease the skillet between portions if needed. For a sweeter version, finish with honey and cinnamon; for a more savory version, use cheese or cream cheese as a filling.
